spicy beef noodlesAdd some heat to your winter with these Spicy Beef Noodles; a delicious Asian-inspired meal with a bit of a kick to it! Served with plenty of vegetables, this is a quick and healthy dinner option.

Match with a Höpt soda to complement the meal and really impress your friends and family!

Serves: 4

INGREDIENTS:
300g beef (schnitzel cut)
– 250g udon noodles

Make a paste with the following
– 1 tbsp sweet soy sauce
– 1 tbsp grain mustard
– 1 tbsp wasabi paste
– 1 tbsp sambal oelek*
– 1 tbsp vegetable oil
*Available from Asian supermarkets

Slice into thin strips
– 2 spring onions
– 1 stick of celery
– 1 medium carrot
– 1 red pepper
– 4 button mushrooms

– 2 baby pak choi (each cut in four pieces lengthwise)
– 1 tbsp of corn flour mixed with 2 tbsp of water
– Chopped coriander
– Vegetable oil
– 1 fresh lime (for garnish)
– Salt and pepper

METHOD:

Cut beef into thin strips (stir fry size). Using the paste you’ve created, smother it on both sides of the beef. Then leave in a bowl to marinate for at least 30 minutes at room temperature. Cook udon noodles as directed on pack and set aside. Heat a heavy-based pan until it’s very hot. Sear the beef for five minutes (keep turning to make sure you’ve spread the remaining marinade). Set the cooked beef aside and let it rest (cover to keep warm).

In the same pan add 1 tbsp of vegetable oil. Once oil is heated, add all the vegetables and toss as you would a stir fry. Once vegetables have softened, add the corn flour and water – then toss and cook altogether for a few more minutes. Season with salt and pepper

TO SERVE:
Serve the noodles up into four serving bowls. Divide the vegetables up and serve on top of the noodles. Place the beef strips on the top of the vegetables and garnish with chopped herbs and a wedge of lime. Finish off by serving the spicy noodles alongside a chilled glass of Höpt Soda Salted Lychee that’s been matched to compliment the flavours perfectly!

Hint: A small bowl of soy and sambel oelek on the table lets your friends season the dish to their own taste
