Raw chocolate bliss balls
These raw bliss balls are easy to make, vegan and gluten free. Not only are they healthy, but they also look great which makes them a good option if you need to bring a plate to a party.
As the recipe makes a lot of them, they store well in the fridge and can be portioned out as snacks throughout the week.
Makes: Around 25 medium-sized snack balls
Serving size: 2 balls
- 200g pitted dates
- 100g raw unsalted cashews
- 50g raw unsalted almonds
- 2 tablespoons cocoa or cacao powder
- 1/2 cup desiccated coconut
- Place the dates in a heatproof bowl and cover with boiling water. Leave to soak for 10-15 minutes until soft. Drain off water and set dates aside.
- If you have a food processor, process cashews and almonds until they resemble large breadcrumbs. Add dates and continue to process until the dates break down and the mixture comes together.
- If you don’t have a food processor, you can grind the nuts using a mortar and pestle instead (substituting the almonds for more cashew nuts may make it a bit easier to handle if you’re doing this!). Combine nuts with dates and mash together with a fork until dates break down and the mixture comes together.
- Add cocoa or cacao powder to mixture and stir to combine.
- The mixture may seem quite sticky but will still be shapeable; form into balls (we did them around half the size of a golf ball, though you can make them bigger if you like).
- Roll in coconut until fully coated.
- Store finished balls in the fridge and they will set firmer overnight.
Note: As long as the mixture is sticky enough to bind together, you can play around with the ingredients.
