Paleo Banana Choc Chip Cookies

chocolate chip cookiesThese Banana Choc Chip Cookies are not only delicious, they’re a healthier version of a much-loved treat among both adults and children alike (regardless of whether you are following a paleo meal plan or not).

Prep time: 10 minutes
Cook time: 15 minutes

INGREDIENTS

– ½ cup coconut flour or almond flour
– ½ teaspoon baking soda
– 8 tablespoons coconut oil
– 1 very ripe banana
– 2 large eggs
– 1½ teaspoons vanilla extract
– ¾ cup dark chocolate chips

METHOD

Preheat the oven to 180°C.

In a large mixing bowl, combine the coconut flour and baking soda. In another bowl, mix the oil, banana, eggs, and vanilla. Stir the wet mixture into the dry mixture and combine well; then stir in the chocolate chips. Place the batter by the teaspoonful on a greased baking sheet.

Bake for 12 minutes until the edges are golden brown.
