Avocado Scrambled Eggs

The combination of avocado and scrambled eggs is heavenly. It might seem like a strange combo but you’ll be so glad you tried it.

INGREDIENTS

– 6 rashers bacon
– 8 eggs
– 1/2 cup milk
– 1/2 tspn salt
– 1/4 tspn pepper
– 1 medium ripe avocado, peeled and cubed
– 2 tblspns butter or ghee

INSTRUCTIONS

Fry or grill bacon until crisp, then set aside. In a bowl, beat eggs. Add milk, salt and pepper. Stir in avocado.
Melt ghee in a skillet or frying pan over medium heat. Add egg mixture. Cook, stirring gently, until the eggs are completely set but still having a gloss, do not over cook. Crumble cooked bacon into pieces and sprinkle over eggs.
