Miso salmon with brown rice salad

miso salmonMeals during the winter months can often be hearty and filling; but sometimes it’s nice to have a lighter dinner in the evening for a change. This Asian-inspired Miso Salmon with a brown rice salad is healthy and perfect for those days when you want tasty food that’s light and fresh.

Serves: 4

INGREDIENTS:
For the salmon
– 4 salmon fillets (around 120g each) – each should be pin boned and skin left on
– 2 tbsp white miso paste
– 1 tbsp soy sauce
– 1 tbsp fish sauce
– 1 tbsp vegetable oil
– 2 tbsp fresh ginger (grated)
– 2 fresh lemons (for garnish)

For the brown rice salad
2 cups of cooked brown rice
– 1 cup of chopped fresh herbs (coriander, basil, mint, parsley, chives)
– 3 spring onions (cut on an angle)
– 2 tbsp of fresh ginger, grated
– 4 tbsp of tamari sauce
– 1 tbsp of fish sauce
– 1 tbsp of oyster sauce
– 2 tbsp liquid honey
– Juice of 2 limes or lemons
– Salt and pepper (or soy)

METHOD:
For the salmon
Put oven on and set to 180°c. Blend all the ingredients (except the salmon and lemons) into a paste. Sit the salmon on a baking dish and smear with the paste. Slice the lemons thinly and place along the top of each fillet. Season with salt and pepper. Place the salmon into the preheated oven (set to 180°c) and fanbake. Bake for 10 minutes – then check the salmon. They should be just cooked (you can cook for longer if you wish)

For the brown rice salad
Cook rice, as directed on the pack. Add all the ingredients to the freshly cooked rice while it’s still warm. Mix well. Season to your taste with salt and pepper (or soy).

TO SERVE:
Spoon the rice onto four warm plates or bowls. Place the salmon on top of the rice. Serve with extra rice if needed, a dish of soy (for extra seasoning), some citrus wedges and some fresh herb shoots. Serve up a glass of Höpt Soda Elderberry and Herb to bring out the fresh flavours even more

Hint: Use quick cook brown rice (it’s much easier to make). The rice will take longer to prepare and cook than the salmon, so start with this this first. Add some stir fried bok choy or broccoli, for a more Asian-inspired flavour,
